I have a lot of garbanzo beans/chickpeas in my pantry and need to use them up soon or they will go bad. I make enchilada's quite often and sometimes use pinto beans with meat and/or salsa. I know that hummus is made with chickpeas, could I use these in place of the pinto beans? But I don't know how I could flavor it. I know I could use your standard enchilada mix on the meat I choose, but is there any other way I season them and make them different... haha! and tasty.
